Tzatziki Dip


250g Coarsely Grated Cucumbers

1/3 Tsp Salt

1 Crushed Garlic Clove

250g Full Fat Greek Yogurt

1 1/2 Heaped Tsp Dry Mint

1 Tbsp Lemon Juice

1/4 Tsp Salt


Peel and grate the cucumbers and add in the salt. Place in a sieve, squeezing out the majority of the water with the back of a tablespoon. Keep the mix in the sieve sitting this on a small bowl so any excess water can drain away. Set aside for a minimum of 30 minutes.

Place the yogurt into a bowl adding the garlic, dry mint, lemon juice, salt and drained cucumber.

Mix everything together well! Place in the fridge until ready to serve.


The cucumbers can be grated with their peel, this is a personal preference.

If you prefer a chunkier dip, the cucumber can be diced.
